Emily’s Protein Pancake Recipe

If you are anything like me, and love finding ways to create your favourite foods into a healthier option, then you are going to love me for this pancake recipe.

I have been using this recipe for years now and it never disappoints, in fact, this recipe has completely replaced my old school pancake cook up.

The best thing about this recipe is that it is completely guilt free and it leaves you feeling satisfied and you literally can enjoy it for breakfast, lunch and dinner, well I do anyway!

Pancakes for the win!

Ingredients-

½ cup oats

1 egg

1 Small banana or half of a large banana

1 heaped tbsp cottage cheese for extra protein (optional)

1 tsp baking powder

Water to blend, start with a small amount 2-3tbsp until you get your desired thickness of mixture, it will get thicker the longer you leave it

Organic Virgin Coconut oil (for cooking)

Toppings (optional)-

Chia seeds

Greek Yoghurt

Raw Honey

Sugar free maple

Cinnamon

Fresh fruit

Nut butters

Directions-

Blend pancake mixture until smooth, check for a good pancake consistency, not too runny and not too thick. If it is too thick, add a little more purified water and if too runny add some more oats to help thicken and save for later.

Heat small pan medium heat with some coconut oil and cook until golden both sides.

Top with your favourite toppings.

**I just absolutely adore sugar free maple and cinnamon, as it has banana in the mixture and tastes amazing like that**
